Japanese knotweed flowers are valued by some beekeepers as an important source of nectar for honeybees, at a time of year when little else is flowering. Japanese knotweed yields a monofloral honey, usually called bamboo honey by northeastern U.S. beekeepers. This is like a mild-flavored version of buckwheat honey. During late April and early May, long after many desert wildflowers have run their course, desert mesquite blooms. Mesquite flowers form a long pod of yellow blossoms. One of the most common desert mesquite trees is called the “honey mesquite.” (As a beekeeper, you know you are on the right track when a plant has the word “honey” in its title!) Honey mesquite is found throughout the Southern United States, especially in the deserts of California, Arizona, New Mexico and Texas. Eat it up, it’s way better than sugar, and tastes so gosh darn good! If you are a grilling fanatic, you have to try this on your favorite meat. There really is a nice woody edge to this honey that the that the trained palette is sure to appreciate. Mesquite honey tends to crystallize fairly quick when it does crystalize. Crystal size and color can vary from very light almost white to amber depending on surrounding vegetation. If you like it thick, get the crystallized Mesquite in the options below. When you pick Mesquite below, a crystallized option will appear and you can choose it if you like. Also on this page as on all pages, you can mix and match if you want to buy more than one jar and save some dough in the process.
