Tink's Grassfed Beef-Eye of the Round Roast Eye of the round roasts are great roasted in the oven and make great sandwich meat. To roast an eye of the round, I first rub it down with olive oil or bacon grease. I put garlic, thyme, salt and pepper. Place it in a roasting pan, cook at 400 for 35 minutes, take it out of the oven and place on a cutting board to cool. Slice thin, meat will be rare to medium rare. Makes the BEST French Dip Sandwiches. Use the pan dripping as the base to create your au jus for dipping. They are also great in the crock pot. Each eye of the round roast weighs 2-over 3 lbs. Gosh, now I've made myself hungry.

Tink's Beef--flank steak--if prepared correctly is wonderful. There are only two flank steaks per carcass rendered. Most people prepare it in fajitas. I prefer to sear it in a hot skillet about 2 minutes on either side (rare to medium rare) and serve with a white wine and shallot sauce and french fries, just like you would be served in a French Bistro. Each flank steak weighs .79-1.4 lbs.

Beef tallow is the fat that is rendered from the animal. The fat has been run through the grinder to make rendering a breeze. Simply put as much tallow as you need in a crock pot on low, put the lid on and walk away. It will quickly melt. You can store the rendered fat in the freezer (as you would butter) or in mason jars in the fridge. You can store what you are using on the counter. Packages weighs 5-8 lbs

Pre-sliced Beef Liver. Not only delicious, but one of the healthiest cuts of beef that you can eat. Our beef is very healthy for you. It offers you more "good" fats, and fewer "bad" fats. It is richer in antioxidants; including vitamins E, beta-carotene, and vitamin C. Our cattle are raised their entire lives on pasture and hay. In the summer months we grow what is called sorghum silage. We use Sudan grass. We raise it without the use of pesticides and we only use chicken litter for fertilizer. It is a beautiful thing growing in the field and is very good for the cattle. While it is still growing and fresh, we chop it up and then pile it up for the winter time feed. It is high in protein and digestibility and the animals love it. After all of the cutting of our silage is complete, we move many of the cattle into that field to clean up the remains of the silage. Loads of good eating. This also is a great way of fertilizing the field. Our cattle has hay at free choice year round. We were the first people up here in our area to use silage and now all of our neighbors are starting to do it. There are different types of silage such as corn silage, etc. but ours is made completely with fresh sudan grass. My husband and his dad made silage many years ago and it is a great feed.
